Oven-Fried Parmesan Chicken

This is a long-time family favorite! It's perfect for a family get-together.
Even if there's a lot of grilling going on, don't rule this out... there are still
plenty of folks around who would rather eat fried chicken! This makes
delicious moist, flavorful chicken, and you don't have to stand over a
hot stove frying chicken! Now that's good news!

3/4 cup butter
3 frying chickens (serving pieces)
3 teaspoons seasoned salt
1/1/4 teaspoon (or more) black pepper
1 1/2 cups flour or fresh bread crumbs
or a mixture of the two
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon paprika
1 1/2 teaspoons oregano
1 cup buttermilk

Line two 15x10x1-inch baking pans ("jelly-roll pans") with aluminum
foil. Divide butter between pans; place them in a 425-degree F. oven
about 5 minutes or until the butter is melted.
Sprinkle chicken pieces with salt and pepper. Combine flour or bread
crumbs, Parmesan, paprika and oregano. Place mixture in a shallow pan.
Pour buttermilk in second shallow pan. Dip chicken pieces in buttermilk,
then roll in flour mixture. Place chicken skin side down in melted butter,
placing half the chicken pieces in each of the two prepared pans.
Bake the chicken 30 minutes at 425 degrees F. Turn the chicken over,
reverse pans on shelves and bake 20 minutes longer. Serves 12.
