Mammy’s Coca-Cola Cake
2 cups flour
2 cups sugar
1 teaspoon baking soda
1 cup Coca-Cola
1 cup (2 sticks) butter or margarine
3 tablespoons unsweetened
cocoa powder
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon vanilla extract
1 1/2 cups miniature marshmallows
[if you must!]
Coca-Cola Frosting (recipe follows)
1 cup finely chopped pecans
Combine flour, sugar and soda; mix well and set
aside. Combine cola,
butter and cocoa powder in heavy saucepan; bring to boil stirring con-
stantly.
Gradually stir this mixture into the flour mixture. Stir in the buttermilk, eggs,
vanilla and marshmallows. Pour the batter into a
greased and floured
13-by-9-by-2-inch baking pan. Bake 30 to 35
minutes at 350 degrees F. Remove the
cake to a wire cooling rack.
Spread the frosting over the cake while it is still
warm, then sprinkle
with chopped pecans.
Coca-Cola Frosting
1/2 cup (1 stick) butter or margarine
1/4 cup plus 2 tablespoons Coca-Cola
3 tablespoons unsweetened cocoa powder
1 pound confectioner’s sugar, sifted
1 teaspoon vanilla extract
In a heavy saucepan combine the butter with the
Coca-Cola and cocoa powder. Bring this mixture to a boil stirring constantly.
Remove pan from heat. Stir in the sifted confectioner's sugar the vanilla
extract. Continue stirring the frosting until it is smooth and spreadable.
