Mammy's Red Velvet Cake
1/2 cup Crisco
1 1/2 cups sugar
2 eggs
2 cups flour
1 tablespoon cocoa
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
2 ounces red food coloring
1 teaspoon baking soda dissolved
in 1 tablespoon vinegar
Cream Crisco and sugar. Add 2 eggs and beat mixture well. Sift, 3
times, flour, cocoa and salt. Add the flour mixture to the creamed
mixture alternately
with the buttermilk. Add the vanilla and red
food coloring. Beat well. Fold in the
soda-vinegar mixture.
Bake in 3 layers at 350 degrees F. for 25 to 30 minutes. Frost with
creamy white frosting and sprinkle with coconut (optional). Keep in
refrigerator.
Frosting:
1/2 cup (1 stick) soft butter
One 8-ounce package cream cheese, softened
One 1-pound box powdered sugar, sifted
1 teaspoon pure vanilla extract
Combine all ingredients and beat to spreading consistency.
