Spicy Marinated Shrimp

3 pounds uncooked large shrimp, peeled, deveined, tails intact
3/4 cup olive oil
1/2 cup finely chopped fresh cilantro
1/4 cup white wine vinegar
3 tablespoons fresh lemon or lime juice
3 jalapeño chiles, seeded, minced
3 large garlic cloves
1/4 teaspoon cayenne pepper
Salt and pepper
3 large lemons, sliced
1 large red onion, sliced

Bring large pot of water to boil. Add shrimp and cook until pink and opaque, 3 minutes. Transfer, using slotted spoon, to large bowl of ice water. Drain. Place shrimp in large bowl. Whisk together oil, cilantro, vinegar, lemon or lime juice, jalapeños, garlic and cayenne in a medium bowl. Season with salt and pepper. Pour marinade over shrimp. Toss to coat. Layer shrimp, lemon slices and onion in large glass bowl. Pour any remaining marinade over the shrimp. Cover and refrigerate 4 hours. (Can be prepared 1 day ahead.)
