Gigi's English Muffin Loaves
5 1/2 to 6 cups flour
2 packages active dry yeast
1 tablespoon sugar
2 teaspoons salt
1/4 teaspoon baking soda
2 cups milk
1/2 cup water
Cornmeal
Grease well two 8 1/2-by-4 1/2-inch loaf pans and sprinkle
with cornmeal.
In a large mixing bowl combine 3 cups flour, yeast, sugar, salt and soda.
Heat the liquids until very warm (120 to 130 degrees F.) Add them to the
dry mixture and beat well. Stir in enough more flour to make a stiff batter. Spoon
the batter into the prepared loaf pans. Cover; let rise in warm place
for 45 minutes.
Preheat oven to 400 degrees F.
Bake the loaves 25 minutes. Remove
from pans immediately and allow to cool on wire racks.
To serve - slice and toast. 16 slices per loaf. Delicious! We love these
served with good fresh butter and orange marmalade...
