Chicken Breasts with Pesto and Summer Vegetables
1/3 cup olive oil, plus more for rubbing
Preheat oven to 425 degrees F. In a large roasting pan set over 2
burners, heat 1/3 cup olive oil. Add the zucchini, summer squash, red and yellow
bell pepper, and onion, season lightly with salt and pepper and stir to coat
with oil. Roast the vegetables in the oven 25 minutes, or until they are tender.
Transfer the vegetables to a bowl and let cool to room temperature. Stir in the
lemon juice and pesto. Pesto
