Chicken Breasts with Pesto and Summer Vegetables

1/3 cup olive oil, plus more for rubbing
3 medium zucchini, cut into 1-inch dice
3 medium summer squash, cut into 1-inch dice
3 medium red bell peppers, cut into 1-inch dice
1 large sweet onion, cut into 1-inch dice
Salt
Freshly ground pepper
2 tablespoons fresh lemon juice
1 1/2 cups pesto (see below)
16 skinless, boneless chicken breast halves (about 4 ounces each),
trimmed and pounded to an even thickness

Preheat oven to 425 degrees F. In a large roasting pan set over 2 burners, heat 1/3 cup olive oil. Add the zucchini, summer squash, red and yellow bell pepper, and onion, season lightly with salt and pepper and stir to coat with oil. Roast the vegetables in the oven 25 minutes, or until they are tender. Transfer the vegetables to a bowl and let cool to room temperature. Stir in the lemon juice and pesto.
Light a grill or preheat a grill pan. Rub chicken breasts with olive oil and season with salt and pepper. Grill the chicken over high heat until lightly charred and just cooked through, about 4 minutes per side. Serve hot, topped with pesto vegetables. 8 servings.

Pesto

Feel free to use store-bought pesto if you are pressed for time; if you'd like
to make a batch yourself, here's an easy, delicious version.

Makes about 1 1/2 cups

1/4 cup plus 2 tablespoons pine nuts
3 cloves garlic, chopped
3/4 cup grated Parmesan
3 cups packed fresh basil leaves
3/4 cup olive oil
1/2 teaspoon fresh lemon juice (optional)
1 1/4 teaspoons salt, or to taste

In a food processor or blender, pulse the pine nuts with the garlic and Parmesan until finely chopped. Add the basil and pulse until minced,
scraping down the side of the bowl. With the machine on, add the olive oil
in a thin stream and process until smooth. Add the lemon juice, if using,
and season with salt.
