Gigi's Marinated Red Snapper
en Papillote

1 small onion, sliced
2 tablespoons soy sauce
1 1/2 tablespoons olive oil
1 1/2 tablespoons fresh lime juice
1 clove garlic, crushed
Minced fresh herbs of your choice
1 1/2 pounds red snapper or sea bass,
skin removed, cut into 6 portions

Preheat oven to 450 degrees F. Cut 6 pieces of parchment paper (can substitute foil if you must, but parchment is better), each approximately
12 inches squares, and set aside.
In a shallow glass dish stir together onion, soy sauce, oil, lime juice and
garlic. Add fish and turn to coat evenly. Cover and marinate in refrigerator
15 minutes. Place each portion of fish in center of square of foil. Spoon
any marinade remaining in dish over the fish. Bring edges of parchment together and seal, making a packet. Place the packets on a baking sheet
and bake for 8 to 10 minutes. Serves 6.
