Mary Margaret's Squash Casserole
6 medium yellow squash, scrubbed,
trimmed, sliced or cubed
1 small onion, chopped
1/4 cup butter
Salt and pepper to taste
1/4 teaspoon paprika
1 egg
6 saltine crackers, crumbled
1/2 cup grated Cheddar cheese
Cook squash and onion in lightly salted water to cover until they are
tender, 15 minutes or so. Drain the vegetables and mash them a little,
but not
as smooth as mashed
potatoes! Add the butter, salt, pepper,
paprika, egg,
cracker crumbs and cheese. Bake
30 minutes at
350
degrees F.
Serves 4.
