Banana Bacon Waffles with Grape Syrup

“Elvis
Presley was not merely the King of Rock ‘n’ Roll. He was
unprecedentedly self-indulgent, and therefore it was natural that
he also
wore the crown of the
King of Nursery Food [the ultimate comfort food].
Elvis loved bowls of mashed potatoes and plates piled
high with mush; he
liked nothing better than buying a hundred
Nutty Buddy ice cream cones and
placing them, ice cream side down,
in a big bowl, then eating as many as
he could before they melted.
The King also had a favorite sandwich: bananas, sautéed in bacon
fat,
with plenty of peanut butter. We have yet to summon the courage
to test
that recipe, but we did find this nice, homey variation of the
banana-bacon theme (sans peanut butter) in ‘The Wonderful World
of
Welch’s’. It makes a dandy nursery breakfast.”
Serves 4

pound bacon
2
cups sifted all-purpose flour
3
teaspoons baking powder
1/4
teaspoon salt
3
eggs, separated
1 1/2
cups milk
6
tablespoons butter, melted
1
tablespoon sugar
1
cup mashed ripe bananas (2 to 3)
Fry
bacon thoroughly, but not too crisp.
Sift
flour, baking powder and salt together. Beat egg yolks, combine
with milk
and butter. Add to sifted ingredients; beat until smooth. Beat
egg whites
stiff; gradually beat in sugar and fold into egg yolk mixture
with
bananas.
Pour
batter into hot waffle iron and bake until brown.
Sandwich bacon between
waffles and top with Grape Syrup.
Grape Syrup
Makes 1 cup
1/2
cup plus 2 tablespoons
Welch’s grape juice
1/2
cup Welch’s grape preserves
1
teaspoon cornstarch
Blend
together 1/2 cup grape juice and preserves. Bring to a boil. Mix cornstarch
with 2 tablespoons grape juice and stir gradually into boiling
liquid.
Cook until slightly thickened.
