Three Spice Chicken Nuggets

40 appetizer servings
1/2 cup flour
1 1/2 teaspoons salt
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon poultry seasoning
1 egg, lightly beaten
1/2 cup water
3 whole boneless chicken breasts, skinned
and cut into
1-by-1 1/2-inch
pieces
Oil for deep frying
Grated Parmesan cheese
Heat oil for deep frying to 375 degrees F.
Combine flour and seasonings in a
shallow bowl. Add egg and water
and blend well. Dip chicken into batter, allowing excess
to drain back
into bowl. Add chicken to oil in small bathes and fry until crisp
about
2 to 4 minutes. Drain on paper towels. Transfer chicken to platter.
Sprinkle with
grated Parmesan cheese and serve.
