Guacamole Superior

This is certainly not run-of-the-mill
guacamole
its a dish
you could
make a meal out of if you so desire.
4 ripe avocados
2 tablespoons fresh lemon juice (we prefer lime juice)
2 scallions, chopped
2 large garlic cloves, minced
2 jalapeño peppers, seeded and minced (wear rubber gloves)
1 tomato, peeled, seeded and chopped
2 tablespoons grated peeled jicama
1 tablespoon sour cream
1 tablespoon Worcestershire
1 tablespoon olive oil
1 tablespoon wine vinegar
2 teaspoons ground cumin
2 teaspoons chili powder
1/4 cup medium hot salsa
1/4 cup grated Monterey Jack cheese
1/4 cup chopped ripe olives
1/4 cup minced skinned chorizo sausage
2 tablespoons tequila
2 tablespoons minced fresh coriander
1 teaspoon salt
Tortilla chips
Peel avocados in large bowl and mash coarse. Add lemon
[or lime]
juice, scallions, garlic, jalapeños, tomato, jicama, sour cream, Worcestershire,
olive
oil, vinegar, cumin, chili powder, salsa, cheese, olives, chorizo,
tequila, coriander and
salt. Stir until combined. Serve with tortilla chips.
Makes about 5 1/2 cups.
