White Bean and Tuna Salad

Quick, easy, delicious!

1 tablespoon white wine vinegar
1 teaspoon fresh lemon juice
2 tablespoons olive oil
Salt, freshly ground black pepper
1 large garlic clove, minced
Fresh minced Italian parsley and basil
1/4 cup tomatoes, seeded, chopped
2 tablespoons thinly sliced scallions
1/2 cup drained, canned white beans
A 7-ounce can tuna packed in oil, drained, broken into chunks

In a small bowl whisk together vinegar, lemon juice, and salt and pepper to taste. Whisk in the oil and whisk dressing until it is emulsified. In a bowl combine tomatoes, scallions, beans and tuna. Add dressing and with a fork toss the mixture gently until it is well combined. 2 servings.
