Judy's Vegetable-Noodle Kugel
8 ounces medium egg noodles
1 onion, chopped
2 carrots, coarsely shredded
1 zucchini, coarsely shredded
1 tablespoon vegetable oil
16 ounces sour cream
12 ounces cottage cheese
1 teaspoon dried rosemary, crushed
1/2 teaspoon salt
3/4 teaspoon pepper
1/4 cup grated Parmesan cheese
Cook noodles according to package directions; drain. Sauté onion,
carrot,
and zucchini in oil in a large skillet until tender; stir in noodles, sour cream,
cottage cheese, rosemary, salt and pepper. Spoon into a lightly greased 2-quart baking
dish. Baked, covered, at 350 degrees F. for 25 minutes;
sprinkle with grated Parmesan and bake,
uncovered, 5 more minutes.
Yield: 6 to 8 servings.
