Sweet Cherry Ice Cream
with Amaretto

1 pound fresh Bing cherries, pitted, or
frozen
unsweetened pitted cherries,
thawed
1/2 cup sugar
1 1/2 cups half and half
1 1/2 tablespoons amaretto liqueur
Purée cherries with sugar in processor. Transfer the purée to
a heavy
medium non-aluminum saucepan. Stir in half and half. Bring mixture
just to boil
over
medium heat, stirring occasionally. Pour into bowl.
Stir in Amaretto. Cool. Cover and
refrigerate until well chilled. (Can
be prepared 1 day ahead.)
Freeze mixture in an ice cream
maker according to the manufacturer's
directions. (Can be prepared 1 day ahead. Freeze in
covered container.
Soften slightly
in refrigerator before serving if necessary.)
Makes
about 5 cups.
