Gigi’s Fruit Salad with Poppy Seed Dressing

One 11-ounce can mandarin oranges,
drained (or use an equivalent amount
of fresh orange sections)
2 apples, cored and chopped
1 pint fresh strawberries, halved
2 bananas, sliced
2 avocados, peeled and chopped
One 15-ounce can pineapple chunks
(use an equivalent amount of fresh
pineapple, if available)
Green or red seedless grapes, halved, or
red grapes, or a combination
1/3 cup orange juice
1/3 cup vegetable oil
1/4 cup honey
1 teaspoon lemon juice
1 tablespoon poppy seeds
1/2 teaspoon salt
1/2 teaspoon prepared mustard

In a large mixing bowl combine the oranges, apples, strawberries, bananas, avocados, pineapple chunks and grapes. [Feel free to use other fresh fruit
of your choice!]
Combine the orange juice, vegetable oil, honey, lemon juice, poppy seeds, salt, and mustard, and mix well. Pour over fruit and toss gently to coat.
Chill 2 hours prior to serving. Serves 6 to 8.
