Gigi's Linguine with
Herbed Avocado Cream
Absolutely decadent!
2 large avocados, peeled and pitted
1/2 cup water
2 teaspoons fresh lemon or lime juice
1/4 cup fresh parsley leaves
1/4 cup chopped scallions
3/4 teaspoon dried basil leaves
3/4 teaspoon dried tarragon
3/4 teaspoon dried dillweed
3/4 teaspoon dried thyme
Salt, freshly ground pepper to taste,
or
your fave
Cajun/Creole seasoning blend
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 pound linguine, freshly cooked
Freshly grated Parmigiano-Reggiano,
for serving, if desired
In a blender or food processor purée the avocado, water, lemon
juice, parsley, basil, tarragon, dill, and thyme. Season with salt and
pepper
and/or Cajun/Creole seasoning blend to taste.
Melt butter in a heavy medium saucepan over medium-low heat. In it
sauté the garlic until soft but not brown. Add
avocado mixture and heat through, stirring occasionally. Stir in the cream. Cook until
thickened,
about
3 minutes.
Divide the freshly cooked pasta between serving plates and top it
with
the Avocado Cream. Serve hot with freshly grated Parmigiano-Reggiano. Makes 4 first course servings.
