Basic Daiquiri
2 ounces light rum
1 1/2 tablespoons lime juice
1/2 teaspoon superfine sugar
3 or 4 ice cubes
Combine all ingredients in a cocktail shaker and shake vigorously.
Strain
into a cocktail glass. Serves 1.
Frozen Daiquiri
2 ounces light rum
1 1/2 tablespoons lime juice
1/2 teaspoon superfine sugar
1 cup crushed ice
Put all ingredients in a blender and blend until the mixture has
the
consistency of snow. Serve immediately. Serves 1.
Pineapple
Daiquiri
1 1/2 ounces light rum
3/4 ounce pineapple juice
1/2 teaspoon lime or lemon juice
3 or 4 ice cubes
Combine all ingredients in a cocktail shaker and shaker vigorously.
Strain
into a cocktail glass. Serves 1

4 ripe bananas, cut into pieces
3/4 cup light rum
1/2 cup simple syrup
6 tablespoons fresh lime juice
1/2 cup crushed ice
Maraschino cherries
Combine bananas, rum, simple syrup, lime juice and crushed ice in
blender. Mix until smooth and frothy. Pour into Champagne glasses
and garnish with
maraschino cherries. Makes 6 drinks.
Frozen Peach Daiquiri

1 1/4 cup very ripe peaches, pitted,
cut into 1-inch pieces
2 cups ice cubes
7 1/2 tablespoons light rum
1/4 cup fresh lemon juice
3 tablespoons peach schnapps
2 1/2 tablespoons sugar
Fresh mint sprigs
Purée all ingredients except mint in blender to slushy
consistency.
Garnish with mint. Makes 2 drinks
Frozen Strawberry Daiquiris

1 pint strawberries, hulled and quartered
2 tablespoons fine sugar
2 tablespoons fresh lime juice
1/2 cup light rum
3 tablespoons Triple Sec
In a sturdy, sealable plastic bag combine the strawberries, sugar
and lime juice. Seal the bag, forcing out excess air and knead the mixture lightly
until
the sugar is dissolved. Freeze the mixture until solid. In a blender
blend the frozen
strawberry mixture, broken into pieces, the rum, Triple
Sec, and 1/3 cup water until the
mixture is smooth. Divide the mixture
among 4 long-stemmed glasses. Serves 4.
Mango Daiquiri
2 ounces light rum
1 ounce Curaçao
1/2 cup mango puree
2 tablespoons lime juice
1 tablespoon superfine sugar
1 cup crushed ice
Combine all ingredients in an electric blender and blend until the
contents have the consistency of snow. Serve immediately. Serves 1
Watermelon Daiquiri
Gourmet July
1982
Pulp from 2 1/2 pounds watermelon, seeded,
cut into pieces,
and chilled
1/2 to 1/3 cup lime juice, or to taste
3 tablespoons superfine granulated sugar
3 teaspoons orange-flavored liqueur
1 cup plus 2 tablespoons dark rum
In a blender, or in a food processor fitted with the steel blade,
purée watermelon, lime juice, sugar, orange-flavored liqueur and rum until
smooth, and
divide among chilled stemmed glasses. Serves 6.
