Chef Keegan's Sugar Cookies

My son the pastry chef :>) says these are the world's best!

1 cup butter, room temperature
1 cup confectioners' sugar
1 cup granulated sugar, plus extra for dipping
2 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
5 cups all-purpose flour

Cream butter with confectioner's sugar and 1 cup granulated sugar.
Beat in eggs until smooth. Slowly stir in oil, vanilla extract, baking
soda, cream of tartar, salt and flour. Chill dough for easy handling.
Shape the chilled dough into walnut-size balls. Dip in granulated
sugar. Place on baking sheet and press down with bottom of glass.
Bake 10 to 12 minutes at 350 degrees F. Makes about 4 dozen.
