Baked Winter Fruits with Spiced Wine Bon Appetit Archives 1 1/2 cups dry white wine 1 teaspoon minced candied ginger 1 teaspoon vanilla extract 1/4 teaspoon ground cinnamon 1/4 teaspoon ground allspice 1/4 teaspoon ground ginger Grated zest and juice of 1 large lemon 1 pound dried apricots 1 pound dried peaches, coarsely chopped 4 tablespoons butter, in small pieces 1 cup chopped walnuts 1 1/2 cups plain yogurt Butter a shallow 2-quart glass baking dish. Combine wine, brown sugar, candied ginger, vanilla, cinnamon, allspice, ginger, lemon zest and juice in medium bowl and blend well. Mix apricots and peaches in another medium bowl. Transfer half of fruit to prepared baking dish. Dot with 2 tablespoons butter. Spread remaining fruit over first layer and dot with 2 tablespoons butter. Sprinkle with walnuts. Pour wine mixture over. Cover with foil and refrigerate overnight. Let mixture stand at room temperature for 1 hour before baking. Preheat oven to 375 degrees F. Bake fruit, stirring once, until fruit is plumped and liquid has caramelized, about 45 minutes. Uncover and let cool. (Can be prepared up to 2 days ahead and refrigerated.) Whisk yogurt until liquefied. Pass separately in sauceboat.
