Kahlúa Fruit Nut Bread
1 cup chopped dates
1/2 cup Kahlúa
1/2 cup warm water
1 teaspoon grated orange zest
2 cups flour
1 teaspoon soda
1 teaspoon salt
2 tablespoons shortening
2/3 cup firmly packed brown sugar
1 egg, beaten
2/3 cup chopped pecans
In a bowl combine dates, Kahlúa, warm water and orange zest.
Set
aside.
Sift together flour, soda and salt. Set aside.
In mixer bowl cream shortening with
brown sugar until light. Add
egg
and
mix well. Add flour mixture alternately with date
mixture.
Stir in
pecans.
Pour batter into greased and floured loaf pan.
Bake
1 hour at
350 degrees F.
