Uncooked Nectarine Compote Ice Milk: Compote: For ice milk: Blend egg yolks, sugar and cinnamon in medium
bowl. Bring milk to boil in heavy medium saucepan over medium heat. Gradually whisk hot
milk into yolk mixture. Reduce heat to low. Return mixture to saucepan and whisk until
mixture thickens slightly, about 6 minutes; do not boil. Strain into bowl. Stir in
vanilla. Cool. Cover and refrigerate until well chilled. (Can be prepared 1 day ahead.)
Freeze in an ice cream maker according to the manufacturer's directions. Freeze in covered
container several hours to mellow flavors. (Can be prepared 1 day ahead.)
