Becky's Kettle of Fish
3 large potatoes, peeled and thinly sliced
1/2 pound fresh mushrooms, sliced
1 pound zucchini, in 1/8-inch slices
4 large tomatoes, peeled, seeded, sliced
2 green onions, sliced
1 1/2 pounds fish fillets (haddock, perch, etc.)
2 tablespoons butter
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Chopped parsley and lemon slices
Generously butter an oblong 2-quart baking dish. Arrange potatoes
and sprinkle with salt. Cover with foil and bake 15 minutes at 350 degrees F. Place mushrooms,
zucchini, tomatoes and green onions over potatoes.
Place fish fillets over vegetables. Cut
a few diagonal slices in fish. Dribble melted butter over and sprinkle with herbs and salt
and pepper. Bake 20 minutes more or until fish is browned slightly and flakes easily.
Garnish
with chopped parsley and lemon slices. Serves 4 to 6.
