Cucumber Salad
This wonderfully refreshing salad cannot be made and
enjoyed on impulse,
as the cucumbers and onions must be marinated overnight. Then
the dressed
salad requires overnight refrigeration as well. It is however, an
oft-requested
family recipe that is well worth the wait. No doubt this salad delighted
taste
buds at many a family or church gathering. Thank you, Lori!
6 medium cucumbers
1 large sweet onion (preferably Vidalia)
Salt
4 ounces evaporated milk, undiluted
1 1/2 cups Miracle Whip
2 tablespoons white vinegar
Peel cucumbers and slice them wafer-thin. Slice onion thinly, cut
slices
in half. Place cucumbers and onion in large bowl, cover them completely
with water
and salt them generously. Cover the container and marinate
the vegetables overnight.
Mix evaporated milk,
Miracle Whip and vinegar. Drain the cucumbers,
fold in the sauce and refrigerate overnight.
(Feel free to add chopped fresh herbs of your choice prior to
serving:
parsley, chives, dill, tarragon, whatever appeals to you!)
