Trader Vic's Cucumbers in Sour Cream
1/2 pint sour cream
1 clove garlic
1 teaspoon sugar
1 small bunch fresh dill
2 tablespoons fresh chopped tomatoes
2 tablespoons tarragon vinegar
1/4 cup olive oil
Salt and pepper
3 cucumbers
Put sour cream in a container that you can cover and store in the
refrigerator. Press the garlic with the sugar, a little salt and freshly
ground pepper and add to
the sour cream. Add finely chopped dill
(or well-ground dill seeds), then add tomato pulp and
add very slowly
the oil and vinegar while stirring constantly. Alternate oil and vinegar
for smoothest sauce.
You can add chopped parsley and chives for color variations. Score
and slice cucumbers paper thin, salt them and add to sour cream
mixture.
Cover and store
in refrigerator. Enjoy!
