Valeria's Lemon Bars Deluxe
A little
history about this recipe... Valeria was a dear friend back in
the 1970s. We worked together in an airline reservations office in the
Deep South. Everyone loved her because she was downright fun, and,
well, lovable! And she always had the best recipes!
Valeria's recipe for Lemon Bars Deluxe was all the rage since it was
baked in a 13x9 pan and therefore made a bigger batch! It flew through
the office like wildfire and became THE lemon bars recipe.
2 1/4 cups flour, divided
1/2 cup confectioner's sugar
1 cup butter, softened
4 eggs, beaten
2 cups granulated sugar
1/3 cup lemon juice
1/2 teaspoon baking powder
Confectioner's sugar for sprinkling
Sift together 2 cups flour and 1/2 cup confectioner's sugar. Cut in
the
butter
until the mixture clings together. Press dough into a greased
13 x 9 x 2-inch
pan. Bake 25 to 30 minutes at 350 degrees F. or until
lightly browned.
Combine eggs, granulated
sugar and lemon juice. Beat well. Sift together
1/4 cup flour and baking powder. Stir into
egg mixture. Pour over baked crust. Bake 25 to 30 minutes at 350 degrees F. or until lightly
browned. Sprinkle with confectioner's sugar. Cool. Cut into bars or squares.
