Faye’s Chocolate Date Nut Squares
This
excellent recipe came to me by way of the
friend of a
friend.
Thank you, Faye, whoever and
wherever you may be!
1 1/4 cups chopped pitted dates
1 cup boiling water
1 teaspoon baking soda
1 3/4 cups sifted flour
2 tablespoons unsweetened
cocoa powder
1/2 teaspoon salt
1/2 cup unsalted butter,
room temperature
1/2 cup solid vegetable shortening
1 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup chopped walnuts
1 cup semisweet chocolate chips
Place dates in bowl. Combine boiling water and baking soda and
pour
over. Let stand at room temperature until cool.
Position rack in center of oven and preheat to 350 degrees F. Grease
and flour a
15 1/2-by-10 1/2-inch jelly roll pan.
In a medium bowl, sift the flour, cocoa and salt together.
Using electric mixer cream butter and shortening with sugar until light and
fluffy. Beat in the eggs one at a time, and then the vanilla. Mix in the dry
ingredients and the date mixture alternately in 3 batches, beginning and
ending with dry ingredients. Spread batter evenly in prepared pan. Sprinkle
walnuts and chocolate chips over top. Bake until tester inserted in center
comes out clean and cake pulls away from sides of pan, about 35 minutes. Cool
completely. Cut into 2-inch squares.
