1 cup granulated sugar
2 eggs
1/2 cup unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup whole dates, chopped
1 cup pecans, chopped
1/4 cup sugar

Preheat oven to 350 degrees F. Generously grease an 8-inch glass baking dish. Beat 1 cup sugar and egg in a large bowl until fluffy. Sift flour, baking powder and salt into sugar mixture and blend well. Fold in dates and nuts. Turn into prepared pan. Bake exactly 30 minutes. Remove from oven immediately and stir, mixing well. Cool completely. Shape into bite-size
balls. Roll in remaining 1/4 cup sugar. Store in an airtight container.

Makes 3 dozen.
