My Favorite Chocolate Cookie Sheet Cake
(Quick, easy, ultra moist and super delicious!)

2 cups all-purpose flour
2 cups granulated sugar
1 cup (2 sticks) margarine
1 cup water
1/4 cup cocoa powder
2 large eggs, well beaten
1 teaspoon baking soda
1/2 cup buttermilk
1 teaspoon vanilla extract

In a large bowl sift together flour and sugar.
In a medium saucepan bring to a boil the margarine, water and cocoa powder. Pour this mixture over the flour and sugar mixture and stir to mix.
In a medium bowl mix together eggs, soda, buttermilk and vanilla. Add this to the cake batter and mix until combined well. Pour batter into a greased and floured jelly roll pan (I use 9-by-13-inch) and bake 20 minutes at 350 degrees F. (Bake longer in 9-by-13-inch pan - about 35 minutes.) Remove from oven and leave in the pan.

Frosting:
1/2 cup (1 stick) margarine
1/4 cup cocoa powder
6 tablespoons milk
1 pound confectioner's sugar
1 teaspoon vanilla extract
1 cup chopped pecans

In a medium saucepan, mix the margarine, cocoa and milk and heat
but do not boil. Add confectioner's sugar and vanilla and mix well. Stir
in chopped pecans and pour icing over the warm cake.
