Sweet
Potatoes with Apple and Pear

Serves 4
3 cups peeled and diced sweet potatoes
1/2 teaspoon salt
2 bay leaves
1 apple, peeled and diced
1 pear, peeled and diced
1/2 cup apple cider
1/4 teaspoon cinnamon
1 tablespoon sugar
2 tablespoons unsalted butter
In
a medium saucepan bring the sweet potatoes, salt and 1 cup water
to a boil
over high heat. Lower the heat, cover, and simmer until the
potatoes are
almost soft, about 6 minutes.
Stir
in bay leaves, apple, pear, cider, cinnamon, sugar and butter.
Cover and
simmer 10 more minutes. Remove the lid, stir, raise the
heat to medium,
and cook until the juice is reduced and slightly
thickened, about 5 more
minutes.
Remove
bay leaves and serve.
