My Favorite Marinated Vegetables

 
1 cup sliced fresh mushrooms
1 cup thinly sliced yellow squash
1 cup thinly sliced zucchini
1 medium sweet red onion, sliced,
slices separated into rings
1 cup broccoli florets
1 cup cauliflower florets
1 cup thinly sliced carrots
1/4 cup fresh lemon juice
1/4 cup white wine vinegar
1/2 cup extra-virgin olive oil
1 tablespoon sugar (less if you prefer)
2 large garlic cloves, minced
1 1/2 teaspoons salt, or to taste
1 teaspoon freshly ground black pepper
Herbs of your choice, such as basil, oregano, dill,
tarragon, parsley, chives, fines herbes.

In a large shallow container combine the mushrooms, yellow squash, zucchini, onion rings, broccoli, cauliflower and carrots.
In a small bowl combine lemon juice, vinegar, olive oil, sugar, garlic,
salt, pepper and herbs. Whisk to mix thoroughly. Pour the marinade
over vegetables and toss lightly. Cover and chill at least 12 hours,
stirring occasionally.
