Mary Margaret's Squash Casserole
6 medium yellow squash,
scrubbed, trimmed, cubed
1 small onion, chopped
1/4 cup butter
Salt and pepper to taste
1/4 teaspoon paprika
1 egg
6 saltine crackers, crumbled
1/2 cup grated Cheddar cheese
Cook squash and onion in lightly salted water to cover until they are
tender, 15 minutes or so. Drain the vegetables and mash them, but not
as smooth as mashed
potatoes! Add butter, salt, pepper, paprika, egg,
cracker crumbs and cheese. Bake
30 minutes at
350 degrees F.
Serves 4.
