Sweet Onion and Cucumber Salad with
Creamy Tomato Dressing

1/4 cup canned crushed tomato with added purée
1/4 cup crème fraîche
1/4 cup mayonnaise
1/4 cup buttermilk
3 tablespoons Dijon mustard
2 teaspoons chopped fresh chives or green onions
2 teaspoons chopped fresh basil
2 teaspoons chopped fresh parsley
2 teaspoons chopped fresh cilantro
2 teaspoons fresh lime juice
1 1/2 teaspoons minced shallot
1/2 teaspoon minced garlic
8 cups mixed baby greens
1 small Maui (sweet) onion, very thinly sliced
1 cucumber, peeled, thinly sliced
Combine all ingredients
except greens, Maui onion and cucumber in
food processor and blend just
until smooth. Do not overmix. Transfer
to a bowl. Season to taste with salt
and pepper. Cover and refrigerate
at least 4 hours. (Can be prepared 1 day
ahead. Keep refrigerated.)
Combine greens, onion
and cucumber in a large bowl. Toss with
enough dressing to coat. Serves 6.
