Breaded Pork Chops

Quick, easy, delicious, what more could we ask?

6 lean pork chops
1/3 cup olive oil
Juice of 1 lemon
Salt and pepper to taste
1 egg
1 tablespoon water
1 1/4 cups fine dry breadcrumbs
1/3 cup grated Parmesan cheese
2 tablespoons finely chopped parsley
2 tablespoons unsalted butter
2 tablespoons olive oil

Marinate the pork chops in a mixture of 1/3 cup olive oil, lemon juice, and salt and pepper to taste for about 2 hours. Drain the chops and pat dry with paper towels.
In a small shallow dish combine the egg and water. In another shallow dish combine the breadcrumbs, Parmesan cheese and chopped parsley. Mix well to combine. Dip the chops in the egg wash. and coat both sides of the chops with the breadcrumb mixture.
Preheat oven to 325 degrees F. In an ovenproof skillet brown the chops in the butter and 2 tablespoons olive oil. Cover skillet and bake the chops for 25-30 minutes or until tender. Serves 6.
