‘People ask me more for my basic chocolate pie recipe than for any
other
chocolate dessert,’ Mother informs. ‘It’s not a
black bottom pie,
or a chocolate
chess pie. It’s just plain old Dixie chocolate pie like I
ate as a child, and my
mother and grandmother ate, and you ate.’
Mother loves to serve this pie at her bridge luncheons, and when she
wants
to
make it fancy, she beats the leftover 4 egg whites with 6
tablespoons
of sugar
till
stiff peaks form, spreads the meringue over
the top of the
pie, bakes it at
about
350 degrees F. just till the top
browns, and chills it
briefly.”
1/2 cup unsweetened cocoa powder
1/4 cup cornstarch
4
large egg yolks
1/8
teaspoon salt
1 1/2
cups granulated sugar
2
cups milk
2
teaspoons pure vanilla extract
1
prebaked 9-inch Chocolate Wafer
Pie Shell (recipe follows)
1
cup heavy cream, whipped to soft peaks
In
a large, heavy saucepan, combine the cocoa, cornstarch, egg yolks,
salt,
and sugar and beat well with a whisk till blended. Over low heat,
gradually add the milk, whisk till smooth, and cook slowly till thick-
ened, stirring constantly. Remove the pan from the heat, add the
vanilla, stir,
and let cool.
Pour the mixture into the pie shell, chill till slightly
firm but not hard,
and serve topped with the whipped cream.
Chocolate
Wafer Pie Shell

cups crushed chocolate wafer crumbs
1/2 cup (1 stick) butter, softened
1/4 cup granulated sugar
Preheat
the oven to 350 degrees F. Grease a 9-inch pie plate and
set aside.
In
a medium-size mixing bowl, combine the wafer crumbs, butter,
and sugar and
stir till the mixture is well blended and the crumbs are
evenly moistened.
Press the mixture into the bottom and sides of
the prepared pie plate and
bake till firm, about 10 minutes. Allow
the shell to cool completely.
