Lee Bailey's Rice Muffins "The rice in these muffins gives them a nice chewy texture." 1 1/2 cups medium rye flour Preheat oven to 400 degrees F. Generously grease 12 medium muffin cups.
Sift together the flours, baking powder, baking soda, and cayenne. Sauté the green onions
and celery in the butter until wilted, about 5 minutes. Toss in the rice. Mix the eggs and
water. Stir into the dry mixture; do not overmix. Fold in the vegetables and rice. Spoon
into cups until three-fourths full. Bake for 20 minutes or until golden. Makes 12 muffins.
