Jo's Quick Tortellini Salad

Two (14-ounce) packages frozen cheese tortellini
1 green bell pepper, chopped
1 red bell pepper, chopped
1 bunch green onions, sliced
1 cucumber, chopped
One 14-ounce can artichoke hearts, rinsed and drained
One 8-ounce bottle Caesar dressing (Jo prefers Lawry's)
1 tomato, cut into wedges

Prepare tortellini according to package directions; drain. Rinse with cold water and drain again. Combine the tortellini with green and red bell peppers, onions, cucumber, artichoke hearts and Caesar dressing in a large bowl. Cover and refrigerate at least 2 hours. Arrange tomato wedges over salad.
Yield: 8 to 10 servings.
