Kaye's Cream Cheese
Chocolate
Chip Cupcakes
Filling:
8 ounces cream cheese,
room temperature
1 egg, room temperature
1/3 cup sugar
1/8 teaspoon salt
A 6-ounce package chocolate chips
Cake:
1 1/2 cups flour
1/4 cup cocoa
1 teaspoon salt
1 teaspoon baking soda
1 cup sugar
1 cup water
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon vinegar
Topping:
Sugar
Chopped nuts
For filling: Combine cream cheese, egg, sugar, salt and
chocolate
chips
and blend well. Set aside.
For cake: Sift together flour, cocoa, salt, baking soda and
sugar.
Add
water, oil, vanilla extract and vinegar and beat well.
Fill paper baking cups 1/3 full. Put 1 heaping teaspoon cream
cheese
filling mixture on top. Top with sugar and chopped nuts. Bake at 350
degrees F.
for 30 to
40 minutes. Makes 22-24 large cupcakes.
