Kaye's Chile Rellenos Casserole

1 pound ground beef
1/2 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
Two 4-ounce cans green chilies, divided
2 1/2 cups shredded sharp Cheddar cheese
1 1/2 cups milk
2 tablespoons flour
1/2 teaspoon salt (or more, to taste)
Pepper to taste
Hot sauce, such as Tabasco, to taste
3 eggs, beaten

Cook beef, onion, salt and pepper in a skillet until the meat begins to brown. Drain. Spread 1 can of the green chilies over the bottom of a 9-by-13-inch baking dish. Sprinkle with 1/2 of the cheese and top with all of the meat mixture. Add the remaining cheese and the second can of chilies. Combine milk, flour, salt, pepper, hot sauce and eggs. Pour over casserole and bake
at 350 degrees F. for 50 minutes or until knife inserted comes out clean.
Cool 5 minutes. Cut in squares. May be frozen. Reheat while still frozen
at 400 degrees F. until heated through. Serves 4 to 6.
