Light Caesar Salad with Bagel Croutons
This
recipe came from the friend of a friend in Florida (you know how that
goes...) I think
she said it came from Cooking Light magazine. That would
not surprise me at all as they have
some surprisingly delicious light recipes.
This has become my favorite
"light" Caesar..
4 cups cubed bagels
(about 2 bagels)
Olive-oil-flavored
cooking spray
8 cups sliced Romaine
lettuce
2 tablespoons shredded
fresh Parmesan cheese
Creamy Caesar
Dressing:
1/3 cup plain fat-free
yogurt
2 tablespoons fresh
lemon juice
1 tablespoon olive oil
2 teaspoons red wine
vinegar
2 teaspoons
Worcestershire sauce
1 teaspoon anchovy paste
1 teaspoon Dijon
mustard
1/2 teaspoon freshly
ground black pepper
1 garlic clove, minced
Preheat oven to 300
degrees F. Coat a baking sheet with cooking spray
and put the bagel cubes on the sheet.
Bake about 15 minutes, or until
croutons are toasted. Set them aside.
For the dressing,
combine all dressing ingredients in a bowl and whisk
until combined well.
Combine Romaine, cheese
and croutons in a large bowl. Drizzle with
Creamy Caesar Dressing. Enjoy! No need
for a guilty conscience...
