Ranch Cucumber and Lime Soup

Prepare this soup a day ahead.
2 large cucumbers, peeled, seeded, coarsely grated
1 cup half-and-half
1 cup plain yogurt
1 cup sour cream
Finely grated zest of 3 small limes
2 tablespoons fresh lime juice
2 tablespoons snipped chives
1 tablespoon minced shallots
Salt and freshly ground white pepper
Combine grated cucumber, half-and-half, yogurt, sour cream, and
lime
zest in medium bowl. Stir in lime juice, chives, shallot, and seasoning.
Cover and
chill thoroughly. To serve, ladle soup into chilled bowls and
garnish with thin slices of
cucumber and snipped chives.
