Boursin Lemon Chicken

1/4 cup flour
1 teaspoon salt
1 teaspoon rosemary, crumbled
1/4 teaspoon freshly ground black pepper
6 chicken breast halves
3 tablespoons butter
2/3 cup sour cream
1/2 cup Boursin cheese
2 tablespoons fresh lemon juice
1 tablespoon sliced scallion
2 teaspoons grated lemon zest
Preheat oven to 350 degrees F. Combine flour, salt, rosemary and pepper
in
shallow dish. Dredge chicken in flour mixture. Melt butter in heavy large skillet. Add
chicken in batches and cook until golden brown, about 5 minutes, turning once. Transfer
chicken to baking dish.
Combine sour cream, Boursin, lemon juice, scallions and grated
lemon zest in small bowl. Spread over chicken. Bake until topping is golden and chicken is
cooked through, about 30 minutes. Serves 6.
