Beans with
Meatballs Taverna Flavia

1/2 pounds fresh butter beans
1
cup sliced celery
2
strips bacon, diced
1
small onions, sliced
1
tablespoon chopped parsley
1/4
teaspoon dried basil
1
large (28 ounce) can peeled Italian tomatoes
Salt
and pepper to taste
1
pound lean ground beef
2
eggs, lightly beaten
2
tablespoons grated Parmesan cheese
2
garlic cloves, crushed
Salt
and pepper to taste
Cook
butter beans with celery in 1 1/2 cups water for 15 minutes.
Set aside.
In
small skillet combine the diced bacon, sliced onion, parsley and
basil and cook till onion is golden. Stir this mixture into the beans
and add the tomatoes and salt and pepper to taste. Cook, covered,
over
moderate heat 20 minutes.
In
a bowl mix together the ground beef, eggs, Parmesan, garlic,
and salt
and pepper to taste. Shape the mixture into small balls
and drop them
into the beans. Cook, covered, over moderate heat
20-25 minutes, or
till the
meatballs are cooked through. Serves
4.
