Pennsylvania Black Cake
Bayou Cuisine - Mary Lee Donald, Moorhead, MS

Rare and Out of Print Books

1 pound light brown sugar
2 cups flour, sifted
1/4 teaspoon salt
1 cup hot water
1 stick butter
2 squares Baker's bitter chocolate
2 eggs, separated
1/2 cup buttermilk
1 1/2 teaspoons soda
1 teaspoon vanilla

In a large bowl mix together brown sugar, flour and salt. In saucepan over low heat mix water, butter and chocolate. Cool and add to flour mixture. Separate eggs; beat yolks in buttermilk; add vanilla and soda and add to flour mixture. Beat egg whites stiff and fold in last. Bake in 9x13-inch pan which has been well greased and lightly floured. Bake 30 to 35 minutes at 350 degrees F. While cake is baking, make frosting:
 

Fudge Frosting

1 cup sugar
4 level tablespoons flour
1 cup water
2 squares Baker’s bitter chocolate

In saucepan combine 1 cup sugar and 4 level tablespoons flour. Add 1 cup water and 2 squares Baker's bitter chocolate. Cook over medium heat, stirring, constantly, until thick. Leave cake in pan, spread icing on cake
while still warm. The icing never gets real thick. Just cook until it clears
and simmers for 2 or 3 minutes.
