Gigi’s
Gouda Shrimp Puffs
3 dozen
1/2
cup vegetable oil
1/4
cup butter
1/2
cup water
3/4
cup plus 2 tablespoons flour
3
eggs
Dash of Tabasco
1/4
teaspoon salt
Dash
of pepper
1 cup shredded Gouda cheese
1
tablespoon chopped chives
One
4 1/2-ounce can shrimp, drained, chopped
Heat
vegetable oil to 350 degrees F. in an electric skillet. Melt butter in a
medium saucepan. Add water and bring to boil.
Add flour, stirring until
mixture leaves sides of pan. Remove
from heat. Add eggs, one at a time,
beating well at medium speed of
electric mixer after each addition. Stir in
salt, pepper, Gouda cheese,
chives and shrimp.
Drop
mixture by teaspoonfuls into hot skillet. Fry about 5 minutes or
until
golden brown, turning once. Drain on paper towels.
May
be kept warm in a 200-degree F. oven about 1 hour before serving.
