Chip Wickett's Chili con Queso Dip
Bon Appetit Archives

2 bacon slices, cut into strips
3 tablespoons chopped green onion
1 large tomato, peeled, chopped
1/2 cup chopped green chiles
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon dried oregano, crumbled
8 ounces sharp Cheddar cheese, grated (2 cups)
8 ounces American cheese, grated (2 cups)
3 tablespoons tomato juice
Minced fresh cilantro

Fry bacon in flameproof serving dish over medium heat until crisp.
Add onion and tomato and cook until onion softens, stirring occasionally,
about 5 minutes. Stir in green chiles, cumin, salt and oregano. Reduce
heat to low. Gradually add cheeses, stirring until melted and bubbling.
Thin with tomato juice if desired. Garnish with cilantro.
Serve immediately with tortilla chips.
