Jo's Brown-Sugar-Glazed Carrots

1 pound carrots
3/4 teaspoon salt
2 tablespoons butter
1/2 cup minced onion
1 1/2 tablespoons dark brown sugar
2/3 cup apple juice
Pepper to taste

Cut the carrots diagonally into 1/4-inch slices. Cook them in boiling
water to cover with 1/2 teaspoon salt, about 5 minutes, or until they
are crisp-tender. Drain them and rinse them under cold water. Pat
carrots dry with paper towels.
Melt the butter in a large skillet over low heat. Add the onion and
cook, stirring constantly, about 10 minutes. Add brown sugar and
cook, stirring constantly, 5 minutes. Add apple juice and cook,
stirring occasionally, 10 minutes. Stir in the carrots, the remaining
1/4 teaspoon salt, and pepper to taste. 6 servings.
