Shrimp and Feta Cheese Sauce à la Grecque
Bon Appétit Archives

1 pound medium shrimp, cooked, shelled, deveined
1 pound feta cheese, rinsed, patted dry, crumbled
6 green onions, chopped
1½ teaspoons dried oregano
4 tomatoes, peeled, cored, seeded, and coarsely chopped
1 pound spaghetti
Salt and freshly ground black pepper to taste

Combine shrimp, feta, onion, oregano, tomatoes, and sat and pepper in large bowl. (Be careful adding salt as feta is salty.) Let mixture stand at room temperature for at least 1 hour.

Add freshly cooked and drained pasta to the sauce and toss to coat well. Serve immediately. Serves 4
