Hawkeye Cookies
Who's to say which recipe belongs to which individual? A
very good question
for
all of us recipe/cookbook collectors! Here's a good example: I ran across a
recipe recently called "Pride of Iowa Cookies". I did a double take as I
read it.
It sounded delicious, and also sounded virtually identical to a
treasured
recipe that came to me via a friend at the University of Iowa
(where I did a
brief stint, many years ago). Call it what you will, these
cookies are yummy!
1 cup vegetable shortening
1 cup brown sugar (packed)
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 cups rolled oats
1 cup coconut
1 cup chopped nuts
Preheat oven to 350 degrees F. Grease cookie sheets.
In a large
bowl cream together shortening and both sugars. Add eggs,
one at
a time, beating well. Add
vanilla extract and blend in well. Mix
in flour, salt, baking soda, baking powder and
oats. Mix well. Then stir
in coconut and chopped nuts. Drop by teaspoonfuls onto cookie
sheets.
Bakes 15 minutes and let cookies cool on wire rack. Makes about 3
dozen yummy
cookies!
