Gigi's Sweet and Sour Pork 1/2 cup flour2 eggs 1/2 teaspoon salt 1 1/2- to 2-pounds lean pork loin 1/4 cup peanut oil 1 can (1 pound, 4 1/2 ounces) pineapple chunks 3/4 cup water or chicken stock 1/4 cup vinegar 1 tablespoon soy sauce 1/2 teaspoon ginger 2 cloves garlic 1/4 cup brown sugar 1/2 teaspoon salt 1 tablespoon Sherry 2 tablespoons cornstarch 2 tablespoons water 1 large onion, cut in wedges 1 large bell peppers, cut in strips Make batter using flour, eggs, and 1/2 teaspoon salt. Cut pork into
small strips, dip into batter and fry in oil over moderate heat until browned. Remove and
set aside. |
