Gigi's Sweet and Sour Pork

1/2 cup flour
2 eggs

1/2 teaspoon salt
1 1/2- to 2-pounds lean pork loin
1/4 cup peanut oil
1 can (1 pound, 4 1/2 ounces) pineapple chunks
3/4 cup water or chicken stock
1/4 cup vinegar
1 tablespoon soy sauce
1/2 teaspoon ginger
2 cloves garlic
1/4 cup brown sugar
1/2 teaspoon salt
1 tablespoon Sherry
2 tablespoons cornstarch
2 tablespoons water
1 large onion, cut in wedges
1 large bell peppers, cut in strips

Make batter using flour, eggs, and  1/2 teaspoon salt. Cut pork into small strips, dip into batter and fry in oil over moderate heat until browned. Remove and set aside.
Drain pineapple and mix juice with water, vinegar, soy sauce, brown sugar, garlic, ginger, salt and Sherry. Simmer to blend flavors. Combine cornstarch and 2 tablespoons water. Add to pineapple juice mixture and cook over low heat, stirring constantly, until thickened. Add pineapple chunks, onions and bell pepper. Cover and simmer 10 minutes. Add reserved pork and simmer
5 minutes. Serve immediately over cooked rice.
