A 9-ounce package frozen artichoke
Dilled Tuna Gratin with Orzo
2 cups chicken stock
1 cup thinly sliced scallions
2 tablespoons olive oil
1/2 pound mushrooms, thinly sliced
2 garlic cloves, minced
A 6 1/2-ounce tuna, packed in
olive oil, drained
1 cup orzo, cooked al dente, drained
3 tablespoons unsalted butter
1/4 cup flour
3 tablespoons fresh lemon juice
3/4 cup freshly grated Parmesan
2 tablespoons snipped fresh dill
1/2 cup fine fresh breadcrumbs
In a small saucepan combine the artichokes and stock, bring stock
to a boil and boil the artichokes for 7 to 8 minutes, or until thy are tender. Transfer
